Black eyed peas
As a child I loved black eyed peas, I'm not really sure why, probably the canning salt, but I still love them so maybe it is the delicate dirt flavor that is the black eyed pea that I love so much. Firstly not a pea, a bean. A skinny skinny bean. Secondly it's the fourth of July weekend,so I think we'll have a veggie that's been here longer that most, since the 1600s, were historic people, don't cha know? So I just put some dried peas in the crock pot with three parts water to beans, that's my rule, you can always throw some rice in at the end if you still have water, or just drain them. They will take about five hour on high, then on to the food processor with Rosemary and garlic to become a weekend dip. Enjoy!

Today's menu......
So today I didn't get a pic, cause I started this blog after sending out the lunch box, which is a byo bag, and if you don't have one you must! The are zippable lunch bags that stretch forevvvvvvvvvvver! No seriously, the boy needs a lot of Tupperware and a water bottle in his and it's heavy when he leaves, so really get one! Annnnnnnnneeeway, today I made risotto wraps with fresh spinach and Parmesan, I threw in some red pepper flakes too, to make it picy, as the kids say it. He got blueberries, and almonds, antioxidants n protein, ya know! Also he got wasabi peas for a snack, sometimes I mix it up, but they are my go to.
The risotto is super easy to make in a crock pot, little bit of olive oil in the bottom, omega 3s for the heart, and half an onion go in first, onions by the way are good for keeping the heart clean AND for lung health, so eat those stinky suckers. Then add a cup of risotto and stir to cot with the olive li and spread out the onion, then add 2 cups low sodium chicken or veggie broth and 1 cup water and there you have it. In 2 hours it'll be done, I salt and pepper it then to try to avoid oversalting.
So tomorrow I'll try to get a pic before he leaves. Till then.....

Soooooooo...... 17 months till it's over
Seventeen months of healthy law school lunches packed for a starving picky husband. The all must fit into tortillas, the preferred application for driving and eating, there must be sides, and a snack. Oh, and they can't be the same. Also for sake of ease they are must be dinnerable for a seven year old and a six month old, and no my children don't eat wraps every day, they must be real dinner. And I'll probably post other rants about lots of stuff too. But hopefully at least lunch every day!
